Ouvrir les tomates avec les mains et presser pour retirer les p\u00e9pins. Conserver seulement la chair des tomates et jeter les p\u00e9pins. D\u00e9chirer la chair des tomates en petits morceaux et r\u00e9server.<\/p>\n<p>\u00c9TAPE 2<br \/>\nFaire chauffer dans une casserole l&rsquo;huile d&rsquo;olive \u00e0 feu moyen. Ajouter l&rsquo;ail, le piment fort et le persil et faire revenir environ 1 minute (l&rsquo;ail ne doit pas brunir).<\/p>\n<p>\u00c9TAPE 3<br \/>\nAjouter le vin blanc et remuer afin de d\u00e9glacer. Ajouter la chair des tomates. Ajuster l&rsquo;assaisonnement (sel et poivre).<\/p>\n<p>\u00c9TAPE 4<br \/>\nCouvrir et cuire \u00e0 feu moyen-doux de 3 \u00e0 5 minutes. Au besoin, pour ajuster la consistance de la sauce, ajouter un peu de jus de tomate \u00e9goutt\u00e9 des bo\u00eetes de tomates.<\/p>\n<p>\u00c9TAPE 5<br \/>\nPendant ce temps, faire cuire les p\u00e2tes jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient al dente.<\/p>\n<p>\u00c9TAPE 6<br \/>\nCouvrir les p\u00e2tes de sauce, saupoudrer le fromage parmesan et servir avec un bon vin italien.<\/p>\n<p>D\u00e9gustez avec un bon Chianti, Montepulciano or m\u00eame Brunello!!<\/p>\n<p>Buon appetito!<\/p>\n<p>The Kitchen Guy\u00ae<\/p>\n<p>NOTE :<br \/>\nVous pouvez utiliser des tomates italiennes fra\u00eeches (sans la peau ni les p\u00e9pins). Vous pouvez aussi y ajouter : c\u00e2pres, oignons rouges, basilic frais, olives noires, etc. N&rsquo;h\u00e9sitez pas \u00e0 mettre plus ou moins de piment fort broy\u00e9.
